It would be extremely helpful if there would be something in the reporting that tells exactly WHEN a student completes an activity. Timestamp would be great.

YES!!!!!! I teach at an online-only school and students are given flexibility for when they complete student-paced work. I would use Nearpod for assessments and correction activities if I could easily check if any new submissions were received. I've wanted this feature for 4 years!
